Boiled Pork & Beans in Tomatoes




INGREDIENTS:

  • Pork (chunks) 100 g (3.5 oz)

  • Mixed beans 1 can

  • Garlic 1/2 clove

  • Onion 1/2

  • Parsley 1 bunch

  • Wine (white) 1/2 cup

  • Del Monte canned tomatoes 200 g (7 fl. oz.)

  • Salad oil 1/2 tbsp

  • Salt a dash

  • Pepper a dash

  • Soy Sauce 1 tsp


STEPS:

  1. Cut the pork into 1 cm (1/2 in) wide cylindrical shapes.

  2. Finely chop the garlic, and cut the onion into 1 cm (1/2 in) squares.

  3. Finely chop the parsley leaves and set aside the stems.

  4. Fry the pork in oil until golden brown.

  5. Add in (2), cook for a short while then pour in the white wine and simmer for 1 minute.

  6. Mash the tomatoes and add to the pan followed by the mixed beans, parsley stems, salt and pepper.

  7. Continue to simmer for 7-8 minutes over medium heat. Season with soy sauce.

  8. Pile all in bowl, dress with parsley and serve hot.
