Simmered Lamb and Tomatoes


  • Lamb 200 g (7 oz)

  • Onion (small) 4

  • Potato 1

  • Black olives 8

  • Wine (red) 200 ml (6.8 fl. oz.)

  • Del Monte whole peeled tomatoes 200 g (7 oz.)

  • Garlic 1 clove

  • Soy Sauce 1 Tbsp

  • Salt a dash

  • Pepper a dash

  • Flour a dash

  • Parsley (finely chopped) a sprig or 2

  • Olive oil as needed


  1. Cut the onion in half and the potato into bite-size pieces.

  2. Season the lamb with salt and pepper and lightly cover in flour.

  3. Heat some olive oil in a frypan and brown both sides of the lamb. Remove, set aside and dispose of the oil.

  4. Add some fresh olive oil and sauté some chopped garlic. Once fragrant add in (1) and continue to sauté.

  5. Add in the lamb and pour in the red wine. Allow to simmer for a few moments in order to decrease the alcohol content.

  6. Add in the whole tomatoes, cover and steam cook for 10 minutes.

  7. Add in the olives and soy sauce and simmer for a few more minutes. Serve in a bowl or dish, season with pepper and parsley.
